With a soft fork the rules are tightened, and older software stays compatible. This is how SegWit (2017) and Taproot (2021) were introduced, for example. With a hard fork new rules arise that old software does not understand. If not all participants follow, a new cryptocurrency splits off, like Bitcoin Cash in 2017.
